La Cucina Povera, literally “food of the poor,” is a term used to refer to the dishes made by peasants in the Italian countryside using inexpensive ingredients or what’s found in the home. The peasant cooking of regions like Tuscany inspire many of the Italian dishes which we in America have come to love.
